Patissier : Hidemi Sugino at 23:39

Little cakes, lined up at the counter with their seductive colours and decorations. Once it's your turn at the counter, you'll have some difficulties in choosing. Why? Because everything looks so good! If you ask me which cake is better, by just looking at it, I'll say, "Everything" . So, where is this place I'm talking about and who is behind this such talent?

It is Hidemi Sugino. He won the 1991 World Baking Competition and has only one shop located at the Kyobashi Building 1F, 3-6-17, Chuo-ku in Tokyo. I'm not really sure when he opened his patisserie but it was said that it was opened since 1973, like what the picture below shows.

Customers who wanted to buy cakes from the patissier will need to have a lot of patience. It is because the shop is small that it can only hold about ten people at a time. People have to wait outside while waiting for the customers inside finished eating their cakes except for those who wanted to take the cakes away instead of eating it there. The shop opens at 10 in the morning and half an hour before the shop opens, there are already people waiting outside the shop.
The shop is so famous that when you come in in the afternoon, the cakes are either sold out or there are a few more left. The cakes that are sold are Sous Bois, Pomme d'Eve, Fraisette, La Amethyst, Everest and much more.

Sous Bois
A sponge cake that is topped with raspberry jam and berries. It is said to be a very balanced cake as it contains kirsch bavarois which provides the fat to cut the acidity of the black currant that could be found inside the black currant mousse (the purplish-pink middle part). This cake has an amazing light texture that could melt easily inside your mouth.

Pomme d'Eve
Pomme d'Eve is a cake that is topped with sauteed apples and calvados which gives a nice contrast to the green apple mousse below. At the centre part of the cake, chocolate jaconde is being put in and below it, there is a cinnamon caramel mousse with cognac that gives a bitter taste but a nice caramel flavour. At the bottom part of cake lies the butter free jaconde. Overall, it is a tasty and delicious cake.
